Just because we are all frugal around here, doesn’t mean we can’t enjoy nice things! Dinner (and presentation) included!
So here is my version of a very frugal, but also fancy (and very easy) meal – Rice and Beans!!!!
Ingredients:
Knorr Pasta & Rice Side dish (I chose cheesy broccoli)
2 cans of Butter Beans
3 cups of sliced, fresh mozzarella
1 pkg of cherry tomatoes
1 jar of artichoke hearts cut in half
fresh rosemary
olive oil
salt & pepper
dinner rolls (optional)
I first heated up water to make this easy Knorr Pasta & Rice side dish. Follow the instructions on the bag to cook it on your stove top.
I used this deal to get it for $0.09 this week:

For the Sauteed Butter Beans, saute both drained cans on medium/high heat in olive oil, rosemary, salt and pepper for about 5 minutes on each side until heated through and slighted golden brown. Keep an eye on these – if you cook them too long, then turn to mush.
Fresh Mozzerella – I bought some at the Olive Bar at Wegmans and just cut them in half!
Roasted artichokes and cherry tomatoes
Place cherry tomatoes and artichoke hearts (sliced in half) on a baking dish. Drizzle some olive oil and season with rosemary, salt & pepper. Stir to coat. Roast at 450 degrees for 15 minutes.
Dinner Rolls
These are dinner rolls made with Rosemary and organic flour. I picked these up at Wegmans bakery. I’m not a “make my own bread” kind of girl. I’ll let Wegmans do that for me – and they are yummy and go perfectly with my this meal!!!
I served this dish with each ingredient separated so that individuals can dish out the amount they would like. Everything is served hot except the fresh mozzarella cheese.

- Fresh Mozzarella – slice in half and place on the serving dish. Sprinkle with a bit of dried basil.
- Roasted artichokes and cherry tomatoes –
- Place cherry tomatoes and artichoke hearts (sliced in half) on a baking dish. Drizzle some olive oil and season with rosemary, salt & pepper. Stir to coat. Roast at 450 degrees for 15 minutes.
- Serve each warm, except the fresh mozzarella, and top with a rosemary infused dinner roll (that I picked up in my local bakery.)
