Here is an easy chicken lo mein recipe that may just outcompete what you can get at Chinese restaurants. I suggest using chicken breasts, but you can use chicken thighs if you prefer. The best part about this recipe is that you just cook the chicken and onions, and then put in the rest of the ingredients and just let it simmer. It’s like an easy stir fry dish! This Chinese dish is a great recipe for anyone who is a fan of chicken and wants to make their own Chinese food at home!
Ingredients needed to make this easy chicken lo mein:
1 tbsp vegetable oil or sesame oil
1 chicken breast (½ pound)
8 oz of spaghetti (which will become the lo mein noodles. You can use these lo mein noodles that have a bit more flavor.)
½ white onion, diced
½ pound of asparagus
2 garlic cloves, minced
¼ c of soy sauce (use low sodium soy sauce if needed)
1 tsp garlic powder
1 tsp onion powder
1 tbsp honey
2 tbsp hoisin sauce
3 cups of chicken broth
Add ins:
Broccoli slaw
Sweet bell peppers (a green or a red bell pepper will work)
Green onions
Purple cabbage
Snow peas
Sesame seeds
- Chop the chicken breast into small cubes. Add the oil, chicken, and diced white onion into a large skillet. Stir and cook until both the onions and chicken are about half cooked.
2. Then add, pasta, asparagus, minced garlic, onion powder, honey, hoisin sauce, soy sauce and chicken broth to a large pan.
3. Stir it all together and cover. Cook on medium-high heat until the liquid comes to a boil.
4. Stir again and reduce heat to low/medium and allow to simmer until the liquid is mostly evaporated. This will make for very tender chicken!
5. This will take about 12-15 minutes.
6. Remove from heat, add in any fresh vegetables like pepper slices, cabbage or broccoli slaw. Top with some sesame seeds for garnish if desired.
7. Garnish with green onions if desired and then serve immediately.
Allow leftovers to cool then store in an airtight container in the fridge for up to 4 days.
