Here is one of my favorite side dishes to bring to a summer pot-luck – Pistachio Pudding Cool Whip Salad! It is also perfect to have for an Easter Sunday side dish!
I remember as a child and teenager loving it when someone made a “salad” like this and brought it to picnics. I remember soon after I got out of college, and had to cook for myself, I decided I had to figure out how to make it myself. I was so super excited when I found out how simple it is to make.
You only need 5 Ingredients to make this Pistachio Cool Whip Salad!
- 1 4 oz pistachio Jell-O instant pudding mix
- 1 20 oz can crushed pineapple
- 1 10 oz package of mini-marshmallows
- 2.25 oz Diamond of California chopped nuts (your favorite – I use pecans or walnuts)
- 1 8 oz container Cool Whip (I used lite) – thawed
How Do You Make Pistachio Pudding Salad?
Mix together the pistachio pudding mix, crushed pineapples, chopped nuts, and cool whip until well mixed.
Fold in the marshmallows – a half of a bag at a time.
Chill and serve cold!

We called this “Watergate Salad!” I have no idea why. But it was always a staple at family gatherings, baby/wedding showers, church covered fish gatherings, etc. I don’t know why we got away from it, but all of a sudden I’m grabbing it again!

Yes, I know it is also called “Watergate Salad” and also do not know the history behind that name! I remember having it at my own high school graduation party, and my mom would make it, and I would bring it to pot-lucks. It’s so amazingly delicious and I hope this recipe comes back as a “trend” again now! 🙂
