This corn pudding recipe was passed down to me from my mom. It seriously is the sweetest and best corn pudding recipe you will ever try!
I used to beg her to make it when I was a kid. Now I try to avoid making it too much for myself so that I can still fit into my jeans. 🙂 It’s not calorie friendly – but it sure is taste bud friendly and will become a family favorite!
Ingredients:
- 1/2 cup soft butter
- 1/2 cup sugar
- 2 eggs
- 1 cup 8oz sour cream
- 1 package 8.5 oz corn muffin mix
- 1/2 cup milk
- 1 15 oz can whole kernel corn, drained
- 1 14.75 oz can creamed corn
Preparation:
Cream the butter and sugar.
Add eggs one at a time and beat well after each.
Add in and beat sour cream.
Gradually add the muffin mix, alternately with the milk.
Fold in both cans of corn.
Pour into a greased 9X13 baking dish. Bake at 325° for 45-50 minutes until golden brown.
Serve warm!

I was going to double the batch to put in a 9×13 pan (pot luck), but your recipe already uses a 9×13 pan. Doesn’t seem like it would fill the pan enough with just the single recipe. Do you think it would be too thick and not cooked properly if I doubled the recipe in the same pan? Excited to try this!!

I thought the same thing because I doubled it not even reading that last part and it filled a 9×13 to the rim! I had to pour some into another dish! It’s in the oven now, can’t wait to see how it comes out 🙂

I double the batch and put it in one of those oversized pans like a double 13 by 9 it worked well but I had to cook it a lot longer and I’m talking almost double the time and just to get it to set up right but over all it was a hit it was wonderful and everyone loved it not had nothing left

I just made this It came out moochie.Cut it while it was hot right out of the oven maybe that’s why. Going to let it cool down some and see what happens. It has a good taste though. O used a little French vanilla milk creamer to finish off the 1/2 cup of milk becuz I didn’t have enough regular milk.

Hi! How is this recipe frozen? I’m planning to make some freezer meals ahead of time and would love to add this to my chili meal. Does it reheat good?

Sara – I’ve honestly never tried!
The one thing I have done is if we don’t eat it all the first day is stick it back in the oven the second day and my husband says he likes it better the second day b/c the top layer gets a little crispier. But I have never frozen if after it was cooked and reheated – only refrigerated and reheated. If you do try it – let us know!
