INGREDIENTS:
- Birds Eye Protein Southwest Frozen Vegetables Blend mix
- 1 green pepper – chopped
- 1 onion – chopped (I purchased pre-chopped pepper and onion combo at Wegmans to make this even easier.)
- 1 can of Red Enchilada Sauce
- 1 15 oz can of diced tomatoes – get a chili flavored variety
- 1 15 oz can of Bush’s Chili Kidney Beans
- Beef Style Meatless Crumbles
**You can add beef or leave this meatless for all of you that squirm at the thought of using a fake-meat soy product. 🙂
- Two Cups of Water
PREPARATION:
Dump all of the ingredients into your slow cooker. Stir and cook for 6 hours on low. This makes about 8 servings. Optional – Serve garnished with corn chips, sour cream, and a dash of fresh or dried cilantro.
