Do you remember the What to Make with Wegmans Freebies: Sesame Tortillas with Teriyaki-infused Eggplant post from last week?
I just wanted to confirm that I did in fact take advantage of these freebies at Wegmans and this meal was consumed earlier this week.
Since I rarely eat meat (and if I do, it’s only chicken), it’s easy for me to love vegetarian meals. Because of that, I was eager to try this.
I simplified the recipe and instead of making the Seseme Paste like the recipe called for, I just simply smeared Tahini on the tortilla shell. Then I lightly drizzled it with honey.
I thought the sweetness from the honey would be a good compliment to the teriyaki marinade in the eggplant. (I was right!)
Overall I give this meal one thumb up. It was tough for me to get the eggplant perfectly cooked so that it wasn’t tough, or too dry. I really liked the flavor though, and the overall lightness of the meal. It isn’t probably in my top 10 of best all time meals, but I would definitely make it again. If I got 2 of the ingredients for free like I did this time, I would absolutely make this a second time! 🙂
