Cheesecake Stuffed Strawberries

Here is an easy recipe to fill fresh strawberries with a delicious cheesecake filling, topped with graham cracker crumbs.  It gives you a bite or two of the best “strawberry cheesecake” mini dessert that will be a hit at any party or potluck!

Ingredients

strawberry huller & corer

1 box of Jell-o cheesecake

2 lbs of strawberries, hulled

2 cups whole milk or heavy cream

crushed graham crackers

mini chocolate chips (optional)

Instructions

  1. In a large mixing bowl, whisk cheesecake mix with 2 cups of whole milk or heavy whipping cream,  until there are no more clumps.
  2. Put the cheesecake mixture into the fridge for 5-10 min until it starts to set.
  3. Rinse and use the huller/corer to create a cavity in the middle of each strawberry.
  4. If you have a small spoon, you can go ahead and spoon the cheesecake mixture into the strawberry.  To be more precise, you can use a piping bag.  Don’t have a piping bag?  No problem.  Just use a spatula to put the cream cheese mixture into a ziploc bag and cut one corner of the bag.  Then you have your own DIY piping bag that you can squeeze the mixture out of the corner and into the strawberry.  You can also just toss it when you are done for easy clean-up.  Use one of these three methods to put the cheesecake mixture into hulled strawberries.
  5. Place some graham crackers or vanilla wafers into a gallon sized ziploc bag.  Use a rolling pin to crush the crackers or wafers into small crumbs.  Set aside into another small bowl.
  6. Dip the tops of the strawberries in the crushed graham cracker crust to cover the cheesecake mixture.
  7. If you want to add some mini chocolate chips to them, go ahead and do that now as well.
  8. Put the strawberries in the fridge for at least 30 minutes to fully set the cheesecake.  Enjoy!
