Rip the Torilla shell in half and line the bottom of the pan (similar to how you will do it on the top in the first picture above.) You should use about 4 tortillas.
Spread a can of refriend beans over the tortilla shells.
Pour in one bag of Birds Eye Recipe Ready Southwest Blend veggies and spread evenly.
Cover the veggies with shredded cheese.
Repeat step 1, this time covering the top with the half circle tortillas
Bake at 350 degrees for 35-45 minutes until heated through and tortillas are slightly golden brown.
Serve with salsa (my personal favorite is Wegmans Peach Mango Salsa)
Optional: also serve with guacamole and sour cream
