Easy Minestrone Soup Recipe

Serves: 4-6
  • 3 Cups of Vegetable Broth (I like using Herb Ox Vegetable Bouillon Cubes)
  • 1 28 oz can of diced tomatoes
  • 1 15 oz can of cannellini beans, drained
  • 2 carrots, peeled and chopped
  • 1 celery stalk, chopped
  • 1 cup onion, chopped
  • 1 medium zucchini, chooped
  • (or look for the bag of chopped Minestrone vegetables that Wegmans has in the produce section to make this even easier!)
  • 2 cups coarsely chopped fresh or frozen spinach
  • 1 tsp. dried thyme
  • ½ tsp. dried sage
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 cup uncooked shell pasta
  • Grated Parmesan or Romano cheese
  1. In a slow cooker, add broth, tomatoes, beans, chopped vegetables, spinach, spices, bay leaves and ½ tsp of salt and pepper. Cover and cook on low for 6 to 8 hours.
  2. Add 1 cup of shell pasta 30 minutes before serving. Remove bay leaves. Add more salt and pepper to taste. Serve with Parmesan or Romano cheese on top.
