Summer is here and it’s time to find recipes to use up fresh garden vegetables, including zucchini! This is my favorite way to make zucchini bread because of its chocolate flavor. This delicious recipe is the perfect way to use up an abundance of zucchini as you can freeze it before you add the glaze. It has a wonderful moist texture and turns traditional zucchini bread into a delicious dessert!
Serve this at your next luncheon or bring it as a summer dessert. You’ll for sure be asked for the recipe!
Ingredients needed for this double chocolate zucchini bread recipe:
Bread dry ingredients:
2 cups flour (use whole wheat flour if preferred over bleached flour.)
1 ¾ cups sugar
¼ cup unsweetened cocoa powder
2 ¼ teaspoons baking powder
1 ½ teaspoons salt
½ teaspoon baking soda
1 cup semisweet chocolate chips
Wet ingredients:
1 stick unsalted butter, melted and cooled
4 eggs
2 teaspoons vanilla
3 cups grated zucchini
Preparation Instructions:
- Preheat oven to 350 degrees and line a loaf pan with parchment paper then spray with baking spray
2. In a large bowl whisk together flour, sugar, cocoa, baking powder, salt, and baking soda
3. In a separate bowl stir melted butter, eggs, vanilla, and zucchini
4. Stir the wet mixture into the dry mixture and stir well.
5. Fold in the grated zucchini. I recommend a box grater like this one.
6. Last, fold in the chocolate chips until the batter is evenly mixed.
7. Pour the batter into a parchment paper lined bread pan.
8. Bake for 60-70 minutes or until a skewer in the center comes out clean. Cool on a wire rack for about 20 minutes then remove from pan and cool completely.
How to make the chocolate zucchini bread glaze:
Ingredients needed for the glaze:
1 ¼ cups powdered sugar
1-2 tablespoons milk
1 teaspoon anise or poppy seeds
- In a small bowl combine powdered sugar and milk, stirring until a smooth glaze forms
Spread on top of the bread the sprinkle on anise or poppy seeds. Or add half and half to see if you like the flavor the anise seeds add to the zucchini bread recipe.
Slice, serve, and enjoy!
